INGREDIENTS
- 1 1/2 cups mashed ripe banana
- 1 1/4 cups sugar
- 3 eggs
- 1/3 cup vegetable oil
- 1 tablespoon vanilla extract
- 2 1/4 cups all-purpose flour
- 3/4 cup quick-cooking oats
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1 cup semisweet chocolate chips
- 3/4 cup chopped walnuts
DIRECTIONS
- In a mixing bowl, beat bananas, sugar, eggs, oil and vanilla.
- Combine the dry ingredients; stir into banana mixture.
- Fold in chocolate chips and nuts.
- Pour into two greased 8-in. x 4-in. x 2-in. loaf pans.
- Bake at 350 degrees F for 55 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 10 minutes before removing from pans to wire racks.
